Chan Dong-wah is probably the last of his kind. Known as the ‘Hong Kong knife king’, the professional knife sharpener is sought after by chefs and butchers from all over the world who bring their slicers and choppers for him to fix. He may be a revered figure, but here in his neighborhood, locals call him Wah Suk, or Uncle Wah. He explains to us how he sharpens knives and why he’s been doing this since he was 13.
